Let's Start at the Very Beginning
Today I was diagnosed with Celiac's Disease.
Surprisingly, I feel okay about it. Possible reason: I've been sick for such a long time that now that I finally know how to fix myself, I can do it. I have a big thing for not feeling helpless. Up until today I was at the mercy of my stomach, and my doctors; swallowing barium, letting them take my blood etc. But today I bought groceries for the first time without wondering whether or not they'd make me ill. I'm even making bread right now from a gluten free mix because frankly, the stuff they sell at the store looks and feels like cardboard. There's no way I'm putting that in my mouth.
As I told my sister, the seriousness and long-term effects of this disease probably won't hit me until someone innocently offers me a cookie and I burst into tears. Dramatic reaction yes I know, but what can I say? I love baked goods! (hence the picture of the very gluten containing cookies here----->
Hopefully this will be the start of recovery, I'm ready to start eating until I'm full! Also, this disease will give me more excuses to look at recipes online...a bad habit I started last year when I didn't feel like doing homework. Guilty pleasure.
Now I'm just waiting for this bread to get out of the oven so I can go to the BYU volleyball game!! WOOT! ***note to reader You'll find I'm also a huge fan of athletics.
